blueberry & banana muffins (recipe)

Muffins are really great.  Eating one is like getting to eat your own personal cake.  They taste good any time day.  Then there is the fact that they are handheld – a major selling point for food (at least in my book, because it means NO dishes!).  This recipe combines two super tasty fruits to create an extra moist, totally tasty muffin that can be enjoyed while sitting down, on-the-go or anywhere in between.

Ingredients

¼ cup yogurt (full-fat)
¼ cup oil
2 eggs, beaten
1¼ cup flour
¾ cup sugar
½ tsp salt
½ tsp baking soda
1 cup blueberries
2 extra ripe bananas

Step 1:  Preheat the oven to 175 C / 350 F

Step 2:  Grease your muffin tin & baking cups (if you are using them)

Step 3:  Mix your dry ingredients together

Step 4:  Combine your wet ingredients (excluding the blueberries & bananas)

Step 5:  Incorporate your wet ingredients into your dry ingredients

Step 6:  Fold in your bananas

Step 7:  Mix in the blueberries

Step 8:  Bake until a toothpick inserted the center comes out clean (about 20 minutes)

Sprinkle with sugar immediately after removing from the oven.
