Not sure about you, but it was not until recently (i.e. until I moved to Europe) that I realized that putting eggs on a pizza other than a breakfast pizza was an actual possibility. And to be honest, I kind of stuck my nose up at it until I tried it. Partly because I have not always been the most adventurous eater and partly because I viewed it as a foodie/yuppie/I pay $20 for a dozen eggs because they come from mauve feathered royal chickens from the hidden island of nobody cares cuisine. Wellll, as it turns out, it is in fact amazing. Plus, it combines pizza, the ultimate anytime food, with egg, the perfect food (designed to grow a whole bird!). Yes, please.
Ingredients (makes 4 mini pizzas or 1 full-size pizzas)
1 cup arugula, chopped
1 cups cherry tomatoes, quartered
1 onion, sliced
1 medium pepper, sliced
2 cloves garlic, minced
4 large eggs
150 gram mozzarella, shredded
1 TBSP oil + 4 tsp oil
Salt and pepper to taste
1 recipe for a pizza crust, divided into four equal pizzas and formed into mini pizza crusts (try 1/3 wheat pizza dough)
Step 1: Preheat the oven to 400 F / 200 C
Step 2: Sauté the onions, peppers and garlic
Use 1 TBSP oil.
Step 3: Add 1 tsp of oil to each pizza crust
Step 4: Put a fourth of your arugula in each crust
Step 5: Split the pepper, onion and garlic mixture evenly among the pizza crusts
Step 6: Top the pizzas with cheese
Step 7: Bake the pizzas for approximately 5 minutes
Step 8: Remove the pizzas from the oven and crack an egg on each pizza
Season to taste with salt and pepper.
Step 9: Bake for an additional 5 to 10 minutes, until the egg has set and the pizza is golden brown
