check out those [burger] buns (recipe)

A great bun can make or break a burger, after all it is the foundation that holds the burger together.  This is a recipe for a great all-around bun that is dense, squishy and oh so yummy.

Ingredients

1 cup warm water
1 cup milk
3 TBSP butter, softened
1.5 tsp salt
1 egg
1 TBSP sugar
1 TBSP brown sugar
600 grams flour, more as needed (can be a lot, ≤ 250 grams, divided)
20 grams fresh yeast (.25 oz. packet instant yeast)
egg, beaten (for the egg wash)
toppings, optional (sesame seeds, poppy seeds, etc.)

Step 1: Mix your dry ingredients

Step 2: Combine your egg, water and milk & add it to your dry ingredients

Step 3: Mix well and knead on a floured surface until homogeneous

If the dough is too wet, which it very well may be, add additional flour – about 50 grams at a time

Step 4: Place the dough in well-oiled bowl and let it rise until doubled

This can take anywhere from 30 minutes to an hour, depending on how warm/humid it is.

Step 5: Preheat your oven to 350 F / 175 C

Step 6: Punch the dough down and knead lightly

Step 7: Separate the dough into 9 equal pieces and form the buns

Try rolling each piece into a ball and then flatten the dough into disks working from the middle out.

Step 8: Brush the buns with an egg wash and sprinkle with your toppings, if desired

Step 9: Bake until golden brown, about 15 minutes
